A Winner of a Dinner


My family likes a hearty meal, especially during football season when the boys are trying to gain weight. Let me just stop and say that living with boys who are trying to gain weight is almost too much for me. All of the calories in my refrigerator and pantry are constantly calling my name.

Football season is one of our favorite times of the year and this is one of our favorite meals. My boys will come home from a friends house or skip eating out with friends when meatloaf and potatoes are on the menu. This is a big WIN for me because I adore having all of my guys around the dinner table. (Thank you Stephanie Watson for the yummy meatloaf recipe!)

Moist Meatloaf

2 lbs ground sirloin

1 onion, minced

1 bell pepper, diced

3/4 cup brown sugar

1/2 cup crushed saltines

2 large eggs, beaten

1/4 cup steak sauce

3 T. ketchup

1 tsp. salt

1/2 tsp. garlic salt

Mustard Sauce: mix together 1/2 cup brown sugar and 1/4 cup prepared mustard

Tomato Sauce: mix together 1 cup crushed tomatoes, 8 oz tomato sauce, 1/4 tsp. each salt, garlic salt, and pepper

Combine meat and next 9 ingredients. Shape meat into a loaf and place in a jelly roll pan. Brush top of meat with mustard sauce and then pour tomato sauce over the mustard sauce. Bake at 375 degrees for 1 hour. Let stand for 15 minutes.

Gourmet Mashed Potatoes

6 medium white potatoes, peeled and diced

1 stick of butter

8 oz cream cheese

1 cup sour cream

1/2 tsp garlic powder

salt to taste

pepper to taste

Cook potatoes in boiling water until soft. Drain and mash. Add the other ingredients and blend well. Bake at 350 degrees for 15 to 20 minutes.
