Great Chicken Salad!


My home church, Second Baptist in Conway, hosted a women’s event a few year ago. I went to the event and had the best time. I was not in charge of anything and I was not on the program. I was able to sit at a table with other women and visit. Everything about the night was special!

I love my home church and I think it is so important for all of us to be involved in a local body of believers where we can share life with others. Accountability, community, and support are just a few of the benefits we receive. When I started True Vine Ministry it was never to take the place of the local church in my life or others lives. The local church is the primary tool that God uses to get the Gospel message to the Nations. As a result, I have loved that True Vine can alongside local churches and encourage women, both in the United States and around the world. Ok, back to my cooking blog. The night I went to the women’s ministry event at my home church the women’s ministry team gave everyone a take home gift. The gift was a packet of their favorite recipes. I have made every single recipe in the packet and loved each one of them. My friend Teri Murphy share this yummy chicken salad. I have made it more times than I can count.

Great Chicken Salad

1 package Angel Shredded Cabbage

1 plain roasted rotisserie chicken or 2 cups cooked and shredded chicken

1 small package dried Cranberries

3/4 package toasted almonds

1 cup chopped white grapes (I’ve never added grapes, but I am sure that it is good)

1 bottle Briannas Poppyseed Dressing

Mix and serve! It is best if you can make the salad a few hours ahead. We like to sear some sourdough bread in butter and serve the salad on top of it. (Hello added calories!)
